In a mixing bowl, add ragi flour, whole wheat and rice flour, mix the dry ingredients then slowly add around 1 cup of water, mix it well so that there are no lumps and keep it aside for 3 hours.

After three hours, add chopped spinach, beetroot, spring onions, cumin seeds, green chillies & salt in the batter and mix it well.

Next heat a non-stick tawa, brush it with little oil, pour one ladle of the batter (just like we make normal Uttapams), after few seconds add the toppings of chopped onion, tomatoes, carrots & coriander leaves on one side, cook it for 3-4 mins on a medium flame from one side, apply little oil on the sides, flip the other side and cook it for another 3-4 minutes and it's done. Serve it hot with your favourite chutney or sauce and enjoy.
