It seems a shame to blend a romanesco when it is just so beautiful to look at! But I’m cold and I crave soup to warm me up, so blend it I did 🤣

Fry the onion in the olive oil until translucent then add the garlic and fry for a few more mins on a low heat.

Add the romenesco and stock. Top up with water if needs be to make sure your veg is covered in liquid.

Simmer for 20 minutes then add your peas and cook for a further 5 minutes. Blend until smooth. Taste and season with salt and pepper. Serve with a swirl of extra virgin olive oil.
