Put the egg, sugar, melted butter, milk and pancake mix into a bowl in that order, and mix with a spoon.

Use 2 spoons to scoop up the batter and drop each portion into the frying oil. Fry both sides slowly on low heat from start to finish.

Put the 2 tablespoons of sugar for dusting in a large bowl and add the doughnuts. Shake the bowl around so the doughnuts are coated in the sugar evenly to finish.

FYI: 200 gm =1 cup dry measure and 70ml=1/3 cup liquid measure.
Extremely easy using just pancake mix (no fussing w/flour, baking powder, etc).
I used preheated electric deep fryer @375' for almost 1min/side and regular sugar for coating, turned out great!!!
Best when eaten hot, right out of the fryer and rolled in sugar.
