I had some leftover pesto that wasn't quite enough to toss with pasta, so I spread it on bread, sprinkled with cheese and baked it in the oven. Ever since then, it's become a family favorite.

1to 2 slices Bread
4to 6 teaspoons Pesto genovese
1 dashGrated Parmesan or Pecorino cheese
1 dashBlack pepper to sprinkle just before eating

Preheat the oven to 200°C. Spread 2 to 3 teaspoons of the pesto on each slice of bread, and sprinkle with grated Parmesan cheese. Bake until the cheese has browned. Sprinkle with black pepper at the table before eating.
