The egg has a nice thick layer of potatoes and is deep-fried. It tastes crispy and a delicious evening snack with green chutney or tomato sauce.

Gather all the ingredients.

Firstly, in a large mixing bowl take boiled potatoes and mashed potatoes, coriander leaves, salt, Kashmiri red chilli powder, maida and cornflour. Combine well making sure all the ingredients are mixed well.

Grease your palm with a teaspoon of oil. Take a portion of the potato mixture. Shape it into a round, gently flatten using your fingers, place one egg in the centre, seal it with the potato filling and once again shape it into a ball. Similarly, shape the rest.

Heat oil for deep frying in a pan over a medium. Once hot put potato ball and deep fry till crispy and golden from all the sides.

Heat oil in a pan add the chopped garlic and stir fry for 1 minute. Now add the sliced onion, capsicum stir fry for a minute on a medium flame.

Now add salt, green chilli and tomatoes and cook until tomatoes are soft.

Add tomato ketchup, green chilli sauce, soya sauce and mix well. Now add the prepared the cornflour slurry.

Now prepare the cornflour mixture and add it to the sauce. Mix well.

Add the fry egg scotch and mix it well with the sauce.

Serve egg scotch hot with green chutney or tomato ketchup.
