Chocolate Mousse is one of my favourite dish and I make quite often. I had some leftover chocolates and very aptly I made Mousse
Steps

Separate eggs and yolks. Whisk the yolks.

Melt the chocolate and butter in double boiler method. Set aside and add expresso. Mix well

Whip cream until stiff peaks. Whip whites until there is soft peaks. Add sugar slowly and keep whisking stiff peaks are there.

Fold the egg yolk into the cream using a rubber spatula.

Check chocolate as it should be runny and lukewarm. Pour the chocolate into the cream yolk mixture.

Add the beaten egg white mixture into the chocolate. Fold through well until no lumps are there.

Divide into shot glasses and refrigerate overnight

Enjoy and garnish with cream and chopped chocolates
