Ingredients

30 mins
3 meals
  1. 400 gAsparagus cut into 1” pieces
  2. 1 tbspbutter
  3. 2 clovesgarlic pressed
  4. Salt
  5. Freshly ground pepper
  6. Seasoning - oregano, chilli flakes, thyme, parsley
  7. 240 mlvegetable stock
  8. 60 mldouble cream

  1. 1

    Over medium heat, melt butter. Add garlic and cook a bit. Add asparagus, season with salt and pepper, cook for 5 mins until golden.

  2. 2

    Dissolve half a cube of vegetable stock in 240ml of boiling water

  3. 3

    Add stock and simmer, covered, until asparagus is very tender but still green 10-15 mins

  4. 4

    Using a hand blender, purée soup until a gravy texture is reached

  5. 5

    Stir in cream, then warm over low heat. Add seasoning and salt and pepper. Add lukewarm water to get it to the consistency of a soup.
