Thai Steamed Fish

A - Prepare the steamer first. Make sure the water is already boiling before steaming. Next clean the fish and score both sides. Pat dried. Season the fish inside and out with a pinch of chicken seasoning powder or chicken bouillon. Stuff bruised lemongrass into the cavity of the fish. Place fish in a steaming plate. Steam over high heat for 8 minutes.

B - In the meantime, pour 1 cup of water in a saucepan. Add palm sugar and cook over medium high heat until sugar is dissolved. Turn the heat off. Add the rest of the ingredients in B into this sugar sauce. Stir to mix. Taste and adjust seasonings accordingly. The sauce or soup should taste hot, sweet and sour, all in one. Set aside.

To Assemble - Once fish is cooked, remove the steaming plate immediately from the steamer. Discard any liquid. Place fish onto a serving plate. Pour the sauce (B) onto the fish. Serve warm with white rice.

Tips - (a) 👉🏻 Place some spring onions or scallions on the steaming plate then put the fish on top. This is to avoid fish sticking to the plate once cooked. (b) 👉🏻 Steam over high heat. (C) 👉🏻 Avoid overcooking the fish or you'll end up with tough flesh. 400-500 takes 8-10mins.
