This is a recipe to use up the leaves of the onions I have just harvested from my plot. A Colombian friend told me she uses them in rice and I thought they most likely be lovely as omelette, same as I would cook spring onions

Chop the onion leaves

Heat a bit of oil in a pan and sautee the onion greens

Beat a couple of eggs and add to the pan and stir until scrambled
