Snow Fungus, Red Date, Lotus Seed, Longan, and Rock Sugar Sweet Soup

Rinse the lotus seeds thoroughly. Cover with water, bring to a boil, then discard the water. Add enough fresh water to cover the lotus seeds by about 1 inch (3 cm), then simmer for about 20 minutes until tender (for dried lotus seeds). Discarding the first batch of water helps keep the sweet soup clear and visually appealing.

Soak the snow fungus in water for 10 minutes, then trim off the tough stem. Drain well and cut into bite-sized pieces. Do not soak the fungus too long to keep its crunchy texture.

Soak the red dates in cold water for 20 minutes, then rinse thoroughly.

Once the lotus seeds are tender after 20 minutes, add 1 cup (200 grams) of rock sugar and simmer for another 10 minutes so the seeds absorb the sweetness.

Rinse the pandan leaves and add them to 4 1/4 cups (1 liter) of water with 1 cup (200 grams) of rock sugar. Bring to a boil, let it boil for 2 minutes, then remove the pandan leaves.

Combine the mixtures from steps 4 and 5. Add the snow fungus and red dates, bring to a boil for 1 minute, then turn off the heat immediately to keep the fungus crunchy and prevent the dates from becoming too soft.
