Ingredients

20 minutes
Makes about 25 gougères
  • 3/4 cupwater (175 g)
  • 6 1/2 tablespoonsunsalted butter (90 g)
  • 1/2 teaspoonsalt (2 g)
  • 1 cupall-purpose flour (125 g)
  • 1 1/4 cupsgrated Comté cheese (125 g)
  • 3large eggs

20 minutes
  1. 1

    Preheat your oven to 320°F (160°C).

  2. 2

    Heat the water, butter, and salt in a saucepan until the butter is melted.

  3. 3

    Remove from heat, add the flour all at once, and stir with a spatula until the dough pulls away easily from the sides of the pan.

  4. 4

    Transfer the dough to the bowl of a stand mixer and let it cool slightly.

  5. 5

    Add the eggs one at a time, mixing on high speed after each addition.

  6. 6

    Add the grated Comté cheese, season with pepper, and grate a little nutmeg if desired. Mix well.

  7. 7

    Spoon small mounds of dough onto a baking sheet lined with parchment paper, using a teaspoon.

  8. 8

    Bake for 20 minutes without opening the oven door during baking (important).

  9. 9

    Serve warm as an appetizer.
