Preheat your oven to 320°F (160°C).

Heat the water, butter, and salt in a saucepan until the butter is melted.

Remove from heat, add the flour all at once, and stir with a spatula until the dough pulls away easily from the sides of the pan.

Transfer the dough to the bowl of a stand mixer and let it cool slightly.

Add the eggs one at a time, mixing on high speed after each addition.

Add the grated Comté cheese, season with pepper, and grate a little nutmeg if desired. Mix well.

Spoon small mounds of dough onto a baking sheet lined with parchment paper, using a teaspoon.

Bake for 20 minutes without opening the oven door during baking (important).

Serve warm as an appetizer.
