Prepare the beef: Trim off any fat and cut the beef into 1 1/4-inch (about 3 cm) cubes.

Marinate the beef with: 1 tablespoon oyster sauce, 1/2 tablespoon soy sauce, 1 tablespoon cooking oil, 1/2 tablespoon seasoning powder, 1/2 teaspoon sugar, and a little black pepper. Mix well and let marinate for at least 30 minutes so the flavors absorb.
Tip: To keep the beef tender when stir-frying, add 1 tablespoon cornstarch and mix well. The cornstarch coats the beef, helping it stay juicy and tender when cooked.

Wash the tomatoes and slice them; remove the seeds if you prefer. Chop the white onion and shallots, separating the layers.

Stir-fry the beef: Add 1 tablespoon cooking oil to a pan. When hot, add half of the minced shallots and garlic and sauté until fragrant. Add all the white onion.
Season with 1/2 teaspoon seasoning powder to enhance the flavor of the vegetables.
Tip: Do not add salt, as it will draw out water from the vegetables and affect the dish's taste.
When the onion turns translucent, the vegetables are cooked. Add 1/2 teaspoon sugar, stir a few times, then transfer to a plate.

Add another tablespoon of cooking oil to the pan and sauté the remaining minced shallots and garlic. When golden, add the marinated beef and stir-fry over high heat. When the beef is browned and slightly seared, add the vegetables back in, toss everything together, then turn off the heat.
