No bake Mango Cheese Cake

This is my first try to make a cheese cake. I searched and read few recipes of cheesecake on Cookpad. I inspired by @cook_aamnasaad and Zainab Aftab @cook_21991231 cheese cake recipes. But Aamna used digestive biscuits which was not in my pantry but Marie biscuits there. I tried to follow mix and match and made my first time no bake cake. I like Aamna Saad’s thick biscuit crust which is unfortunate I didn’t get that. Even that I used 4 rolls of marie biscuits but next one I guess I need 6 rolls of it to make it thick. Bottom layers I followed both my favorite cooks Aamna Saad and Zainab’s recipe but top layer I created myself. However, I am not a Mango fan but when you got a lot of mangoes from your dad and you do not want to waste it. It’s a good treat for him too.
Another thing was gelatin, I have never used it before. It’s a first time experience for me. But Alhamdollilah, it turned our so delicious. My whole family loved this cake on Eid. Now the next will be baked cheese cake in my list.

Firstly, crushed all marie biscuits with pestle and mortar and spread it in springform cake mold. Pour melted butter and mix it well.

Spread it equally on the mold base. Take a cup or bowl and press it well. To make sure it is spread evenly or not. Once it’s do e put it in fridge for 10 mins.

In the mean while, cut one mango and put it in blender and make a puree. Keep a side.

Take hot boiling water in a cup and add gelatin in it. Dissolve it and leave it for10 mins.

Time to beat cream cheese with sugar on high speed in in one bowl.

Add gelatin, crushed lemon zest and lemon juice.

In another bowl, pour cream and condensed milk and beat it again.

Por cream mixture in cream cheese mixture as well as mango puree. Mix it well and pour whole mixture on marie biscuit crust.

Cut mangoes. And create your own design. I cut and gave rose shape on the top. Again make a mixture if gelatin and pour it on mangoes. Garnish with mint and refrigerate until it sets.

Serve cold, creamy and cheesy, sweet and tangy dessert to your loved ones.

I had a great experience and love the texture and flavor of cheese cake.
