Easy to Make Vanilla Cupcakes

I am not exactly keen on drinking tea, or organising tea parties, but since I have spent 4 years in the UK I consider myself kind of British 😂 so I do enjoy the food at #afternoontea gatherings. The cakes, the scones, the cucumber sandwiches 🤤.
So, here is my recipe for vanilla cupcakes to accompany our afternoon tea.
The original recipe, which I have alternate a bit, to my liking is from a greek author. Here is the original recipe https://cookpad.wasmer.app/gr/sintages/13579261-rainbow-cupcakes-xromatista-kekakia-gia-parti-me-bouturogala by @elenakisar

Steps
- 1
Firstly prepare the buttermilk. Mix the milk and orange stir and set aside until needed.
- 2
Melt the margarine in your microwave oven or on a sauce pan, over medium heat.
- 3
Whisk the melted margarine with the sugar, until nice and fluffy, add the eggs, one at a time, making sure before adding another egg that the previous one has been mixed in thoroughly into the batter.
- 4
Add 1/3 of the self raising flour, the salt, the vanilla and the baking powder and mix well. Add half of the buttermilk. Then add another 1/3 of the flour, the remaining buttermilk and then the rest if the flour. Mix well. You should get a think but runny dough.
- 5
Line a cupcake tray with cupcake papers. Fill the cupcake papers up to 2/3 and bake over a preheated oven for 15-20 minutes over 180oC. Use a toothpick to check after 15 minutes, if it comes out dry they are ready, if not bake for the whole 20 minutes.
- 6
You can cover with buttercream, cut and fill with jam or eat them as they are. Enjoy your cup of tea ☕️.
