Khaman is a popular delicacy from Gujarati cuisine. It is light, spongy, and made from besan. Perfect for breakfast or evening snacks.

Take besan and sieve it. Now put it in a mixing bowl, add salt. Mix nicely. Now gradually add water and mix it. (On the other hand, keep the steamer on.)Batter should be free-flowing.

Pour the batter into the greased plate. Cover with lid and keep it for 20min on medium flame. Next in another pan add oil, mustard seeds. Let it crackle. Add slit green chili, curry leaves.

Add 1/4 cup of water, 2tbsp of sugar, salt. Keep stirring till sugar is dissolved. Lastly, add lemon juice to it. Switch of the flame. Now pour this tadka water on steamed khaman. Cut into square shape and serve it with any chutney.
