Inspired by the blog post @Lena wrote this week all about quesadillas, with and without cheese, I’m sharing my secret for making perfect cheese quesadillas—soft, not burnt, and with perfectly melted cheese, just the way my family likes them.

Inspired by the blog post @Lena wrote this week all about quesadillas, with and without cheese, I’m sharing my secret for making perfect cheese quesadillas—soft, not burnt, and with perfectly melted cheese, just the way my family likes them.

Heat a griddle (comal), or use a skillet if you don’t have one. To check if it’s hot, sprinkle a little water on it—the drops should sizzle and dance. Once it’s hot, lower the heat to the lowest setting. Place as much shredded cheese as you like on half of a tortilla—my family likes them extra cheesy. Here, I made one with a corn tortilla and one with a whole wheat flour tortilla.

Place the tortilla with cheese on the griddle. Once it’s warm, fold it over the cheese and cover with a lid. After 2 or 3 minutes, flip it so the other side heats up and the cheese melts completely.

Serve with your favorite salsa, homemade or store-bought. You can also add other ingredients like ham, veggies, or anything you like.
