Arisa Pitha is a traditional and authentic sweet dish of Odisha. This sweet dish is prepared on any auspicious occasion including Dussehra .The main ingredients are fresh rice flour and jaggery (gud) or sugar. It is deep fried in oil or ghee (clarified butter)
White sesame seeds and saunf are used to increase taste and smell. Here, I have used liquid jaggery and it brings amazing colour and taste.

Ingredients

12-14 mins
10 arisa
  • 500 gmrice
  • 350 gmjaggery
  • 50 gmwhite sesame seeds
  • 1 tbspsaunf
  • 1 pinchsalt
  • as required Oil/ghee to deep fry

Steps

    Clean,wash and soak the rice overnight/5 hours in minimum.

  2. 2

    Decant the water and spread the soaked rice, on a muslin cloth, under the fan, to dry all water, present with the soaked rice.

  3. 3

    Grind the rice to a powder like sooji.

    In a wok take jaggery and bring to boil.

  4. 4

    Mix the saunf with the jaggery and when jaggery starts thickenig add rice powder in batches and mix continuously till all rice flour, used to form the Arisa dough. Allow to cool the dough.

  5. 5

    Heat oil /ghee in a wider pan. Make balls out of the dough. On a butter paper,take some sesame seeds. Press the balls lightly on the both sides. I have prepared a bit large size.

  6. 6

    Deep fry both the sides of Baroda pitha on medium flame and serve hot the delicious Arisa Pitha.
