Khajur Pak
Steps

Deseed khajur and chop in small pieces. Grind it in a mixer.

Chop almonds, cashew nuts, half of pistachio and walnuts in small pieces.

Heat 1 tsp ghee in a heavy bottomed karahi. Add chopped almonds, cashew nuts and walnuts and roast it on low flame for 1 minute. Now add melon seeds and roast again for 1 minute.

Transfer it in a plate and let it cool.

Now in the same karahi add remaining ghee. Add grinded khajur and roast it on low flame till it turn lumpy and mixed well. It may take 6-8 minutes. Switch off the flame.

Now add the roasted dry fruits and mix well. Let it cool to room temperature.

In a separate plate add dessicated coconut powder and chopped pistachio and mix.

Now take the khajur mixture and roll it to a log shape. Keep this log on dessicated coconut powder and pistachio mixture. Roll it over it in such a way that this mixture gets coated on log.

Now wrap the logs in foil and keep in refrigerator for 10-15 minutes to set.

Take it out from refrigerator and cut in pieces.hi

This khajur pak is healthy and nutritious and can be stored for 15 days in airtight container.
