Wash and soak rice for 10 minutes. Keep aside.

In a safe microwave glass bowl. Add 1 onion cut into length wise, peeled garlic and 1 tbsp oil. Mix.....Microwave for 2 minutes. After 2 minutes take out from the oven and keep aside.

Meanwhile fry the cashew nuts, onion, ginger and green chillies. Cool it
and grind with bunch of coriander leaves. Once it is done keep aside. - 4
In the same bowl add mixed diced vegetables and microwave for 4 minutes. Now it is done.

Then add the grind masala, the whole garam masala, fresh thick curds, 1 cup water, salt as needed, 1 tbsp finely cut coriander leaves, and 1 tbsp finely cut mint leaves. Drain the soaked rice and add to that..Mix....well. And microwave for 15 minutes. Stirring once in - between

After 15 minutes take out from the oven and check it. If it is done. Add lemon juice, mix well and allow 2 minutes standing time.

Sprinkle chopped coriander leaves. Ready to serve...
