Beach Bread Pizza

This is a work in progress. Nearby Fort Myers Beach restaurants are known for their "beach bread" appetizer. Basically it is blue cheese, fresh chopped tomatoes topped with mozzarella cheese, then baked on a hoagie or sub roll. I've been trying to work on a pizza which incorporates some of the same ingredients but more of a main dish pizza. If you try make this recipe I would love to hear what you think and whether you would make changes for the better, especially if you have sampled beach bread on Fort Myers Beach.

Ingredients

  1. 28” Soft sub or Hoagie rolls, sliced in half, lengthwise
  2. 2 tablespoonolive oil, divided
  3. 4 tablespoonsonion, chopped
  4. 4 tablespoonsgreen pepper, chopped
  5. 2 clovesgarlic, minced
  6. 4 tablespoonssliced black olives
  7. 1 teaspoononion powder
  8. 1 teaspoongarlic powder
  9. 1/2 cupGorgonzola cheese, crumbled
  10. 1 cupfresh plum tomatoes, seeded and diced
  11. 1 teaspoonItalian seasoning
  12. 24 piecespepperoni
  13. 1/2 cuppre-cooked and drained Italian sausage (optional)
  14. 1 cupshredded mozzarella cheese
  15. 2 tablespoonsfresh basil, minced

Cooking Instructions

    In a small frying pan heat the olive oil and sauté onions, green pepper and garlic just until onion is wilted.

    In a small mixing bowl, combine onions, green pepper, garlic, black olives, diced tomatoes and Italian seasoning. Gently stir until mixed.

    Preheat oven to 425 F. Line a baking sheet with nonstick foil or parchment paper.

    Brush cut sides of rolls with one tablespoon olive oil. Sprinkle lightly with onion powder and garlic powder. Top with Gorgonzola cheese and tomato mixture.

    Sprinkle 1/4 cup pre-cooked Italian sausage (optional) on top of tomato mixture Place 6 pieces of pepperoni on top. Sprinkle 1/4 cup mozzarella cheese on top of pepperoni.

    Place in pre-heated oven and bake about 10 to 12 minutes, or until bread is crusty on the outside and the mozzarella is melted and beginning to turn golden.

    Remove from oven, sprinkle with fresh basil. Cut into halves and serve.

    You could make this a meatless meal by substituting sauteed mushrooms for the pepperoni and sausage.

I am a retired school library media specialist living in southern Indiana. I spent a number of years working in schools around the world and have lived in Germany, Turkey, Saudi Arabia, and Japan. I enjoy travelling, reading, and eating great food. I especially enjoy the challenge of re-creating dishes that I discover when I read a book. My last creation based on a book was a “Waves of the Danube” cake which was mentioned in "People of the Book" by Geraldine Brooks. It was absolutely decadent and delicious. I have always been in love with cooking and pie baking comes easy to me. I find that baking soothes me in times of stress. The first time I bake something I always follow the recipe exactly to see how it turns out. Afterwards, I will analyze it and make changes if I feel that the recipe could use some tweaking before I make it again. My cooking skills come from my Polish American family roots in Detroit, Michigan and its suburbs.
