I made this recipe a day simply to try to season the doigh...and it just expanded until I made pozza bread. great experiment though. I am happy to share it

I made this recipe a day simply to try to season the doigh...and it just expanded until I made pozza bread. great experiment though. I am happy to share it

Sift flour into large bowl

Heat the water to around skin temp and dissolve the sugar in it
- 3
Add the yeast to the sugar water mix and allow to stand for 3 minutes. during that time continue steps

combine other dry ingredients into bowl of flour. if more seasoning is desired please feel free to add optional Chilli powder or Cracked Black Pepper

Incorporate 3 tablespoons of the flour mix into yeast water mix and allow to stand for additional 5 minutes or until bubbly

To dry portion add 4 spoons oil and slowly incorporate yeast water slurry into the remaining dry ingredients. Mix by hand until mixture holds but isnt extremely hard or sticky. if too sticky slowly add a marginal amount of flour until the mix is firm. if too firm add additional water

Allow dough to rise for 20/30 minutes

After doigh has risen punch it back down and coat the outside with about 2 tablespoons of olive oil.

Allow to rise again and punch back down and reknead

Portion out small rolls into baking pans and allow to rise in cool dark place for 20 minutes.

Preheat oven in the last 5 minutes of the last raising and bring to 350°F

Bake until golden brown on top for completion

Serve for breakfast with cheese and meats.
