Wash and chopped the leaves.Heat oil in a kadhai add onion slices saute 2 minutes then add chopped ginger,garlic and green Chilli. Saute 1 minutes

When onion turns golden brown add amaranath leaves mix well. Cover and cook for 4-5 minutes on medium flame.then add turmeric powder, red Chilli powder and salt.mix well.

Add chopped tomatoes mix again cover and cook on low to medium flame until the leaves turn soft. Then remove the lid cook on high flame for 2-3 minutes.when oil has released turn off the flame. Serve this with roti or paratha
