First, make the syrup. In a pot, add sugar and 1 cup of water. Bring it to a boil, then add saffron strands and peeled cardamom pods. Cook until the sugar dissolves and the syrup becomes sticky. Turn off the heat.

In a bowl, mix all-purpose flour and yogurt well. Gradually add water to make a medium-thick batter, neither too thick nor too thin. When ready to make jalebi, add baking powder and mix well.

Heat oil in a pan. Once the oil is hot, reduce the heat. Fill a squeeze bottle or cone with the jalebi batter and pipe it into the hot oil in a spiral shape. Fry the jalebi on medium heat until crispy. Remove and soak in the syrup for 2-3 minutes. After 3 minutes, remove the jalebi from the syrup and place on a plate. Repeat for all jalebi.

Our crispy and delicious Gujarati jalebi is ready. It tastes great whether served hot or cold. In Gujarat, it is often served with fafda.
