Cooking Instructions

Preheat oven to 400 degrees. Bring a pot of water to boil. Add salt and cook manicotti as per the package instructions. Once cooked, drain and run under cool water. Set aside on dish to cool off.

While cooking, in a big bowl add ricotta cheese, 12 oz pecorino, 12 oz mozzarella, eggs, parsley, salt and black pepper. Mix together.

In a large baking dish, pour about 2 ladlefuls of tomato sauce and spread evenly across the bottom.

Place cheese stuffing into a gallon ziplock bag. Cut one of the bottom corners and squeeze stuffing into manicotti. Place manicotti into baking dish and continue to fill the rest of the manicotti.

Once all manicotti are filled, pour some tomato sauce over all the manicotti. Place in oven and cook for 20 minutes.

After 20 minutes, remove dish from oven and sprinkle rest of mozzarella and pecorino cheese on top. Place in oven and cook 10 minutes or until the cheese has melted on top. Remove from oven and serve.

Manicotti variations are basically in the way you make your stuffing and what kind of sauce you use. For this recipe, I'm using sausage and spinach stuffing, in Manicotti pasta shells. For the sauce, I'm using homemade spaghetti sauce made from ripe tomatoes from our family garden, (recipe for the sauce to come later.) This recipe is rather large and can feed up to ten or twelve people. You may want to shorten it to your liking or wait for a large family gathering. The sauce is thick and zesty with lots of cheese.
