Cooking Instructions

Season the chicken thighs with salt and pepper, then coat them in flour

Fry them, and meanwhile, boil the eggs for 10 minutes

Turn the thighs over, and when they are golden, set them aside

In the same oil, make a sauté with the finely chopped vegetables. Add salt and let it cook on low heat for about 10 minutes

When done, add the apple and sauté for three minutes

Then increase the heat and pour in the wine. Let it cook for two minutes to evaporate the alcohol

Transfer everything to a blender and blend

Place the thighs in the pot, add a bay leaf, and pour in the blended sauce

Add a little water (to rinse the blender, too) and a splash of soy sauce. Let it cook for about 25 minutes on low heat

Remove the chicken thighs, chop the egg yolks, and add them to the sauce. Mix well
