Ingredients

3-4 people
  1. 2 poundsjumbo shrimp cleaned and deveined with tail on
  2. 1kielbasa sausage link rope sliced
  3. 4mini corner on the cobs cut in half
  4. 8small red potatoes cut into quarters
  5. Tablespoonold bay seasoning
  6. 1 tablespoonCajun seasoning
  7. 1 tablespoondried parsley
  8. 2 teaspoonblack pepper
  9. 4 tablespoonsolive oil
  10. For Cajun butter sauce
  11. 4 tablespoonsbutter
  12. 1 cupchicken broth/stock
  13. 1/4 cuponion
  14. 2 tablespoonschopped garlic
  15. 3 tablespoonsCajun spice mix
  16. 1 tablespoonbrown sugar
  17. 1 teaspoonolive oil

Cooking Instructions

    Preheat oven to 400°. Add potatoes corn and sausage to sheet pan. Set aside a teaspoon of each Seasoning to season your shrimp with. Add remaining seasonings to corn potato mixture. Drizzle with olive oil and coat throughly.

    Bake for 15 to 20 minutes until potatoes can easily pierced with a fork.

    Season shrimp. Add to your sheet pan during the last five minutes of cooking. This time varies depending on the size of your shrimp. Keep a very close eye on your shrimp because you do not want them to overcook.

    To make cajun butter sauce sautéed onions and garlic in olive oil over medium heat. Add butter and allowed to fully melt.

    Turn heat down to medium low. Add chicken stock. Cook for 2 to 3 minutes.

    Add Cajun spice mix and brown sugar. Cook in additional 3 to 4 minutes. If sauce becomes too thick add a little bit more chicken stock.

    As soon as shrimp are done remove sheet pan meal from oven. Add Cajun butter sauce and serve.
