Semolina Discs

Presenting a semolina made tasty treat which can be made from common ingredients readily available at all times, its named as SEMOLINA / SOOJI DISC.
Its a healthy snacking as it a low oil preparation and steamed.
Each disc is stuffed with a spiced potato filling and the outer covering is made up of semolina.
Served the discs with Tamarind Chutney.

Each disc is stuffed with a spiced potato filling and the outer covering is made up of semolina.

Mash boiled potatoes and keep aside. In moderately heated pan add oil, add mustard seeds + Dal and allow to sizzle. Then add green chilli + curry leaves + hing and allow to sizzle, then add mashed potatoes and sauté for few minutes by adding turmeric + salt.
It takes around 4-5 minutes.
Put aside and let it cool. - 2
In a mixing bowl, add semolina + curd + salt + ginger paste + pepper powder + sugar + water, mix nicely and put to rest for 15 - 20 minutes.

Now grease palms, take medium size potion from potato and give shape of cylinder, make cylindrical shape keeping in view the height and diameter of steel glass. Filling is ready.

Grease steel glass, arrange steamer by adding 2 cups water and steamer / vessel should be such that both glasses fits well.
I steamed in pressure cooker. - 5
After 20 minutes semolina batter rises, add water if required, we need idli batter consistency. Add fruit salt + slight water to get activated, give a gentle mix. Batter turns frothy.

Now fill half of the glasses with the batter and place the potato filling right in the middle and press down very gently so that the cylinder touches the base of glass. Now fill the sides / diameter of glass with semolina batter and fill 3/4 of glass as after steaming batter will rise up.
Don’t fill up to the rim of the glass. - 7
Now place the glasses in steamer and steam for 10 - 15 minutes. Check with tooth pick / knife whether it has cooked or not.

Take out from steamer and allow to cool to some extent. Then de mould by running knife through the edge so that it comes out easily. Then cut / slice into pieces, by default it comes out in disc shape.

Further the slices can be slightly toasted on pan / tawa for a more better taste.
