To make the syrup:
Combine 1/2 cup sugar (about 100 grams), 1/4 cup water (about 60 ml), and a squeeze of lemon juice in a saucepan. Cook over heat until it thickens slightly. Add a little orange blossom water, then remove from heat. - 2
For the filling:
In a small bowl, add the ground walnuts. Gradually add the syrup until the walnuts are slightly sticky and hold together. Add the rose water and orange blossom water. - 3
Take the kunafa dough and spread it out on a tray. Arrange it in a plus (+) shape. Cut the dough to make small strips for rolling.

Place the filling in the center, fold the edges over, then roll up tightly, pressing gently as you roll.

Cover the rolls with plastic wrap and let them rest for about 1 hour.

After 1 hour, brush the rolls with melted butter or ghee. Brown them either in the oven or in a skillet on the stove, turning until golden brown.

Once golden and crisp, remove from heat and drizzle with the syrup.
