BK's Italian Sausage & Peppers Marinara

Relatively simple dish I threw together. My goal was a spin on the Italian sausage and pepper sub but over pasta. You can the sausage and peppers psrt of this on a sandwich with some good cheese melted just as easy.

Relatively simple dish I threw together. My goal was a spin on the Italian sausage and pepper sub but over pasta. You can the sausage and peppers psrt of this on a sandwich with some good cheese melted just as easy.
Cooking Instructions

Precook the Italian sausage. If I am thinking ahead, I will smoke it ahead of time. If not, I just boil it for about 12-15 minutes. You could also precook it in the oven. Just need to be able to cut it up without it falling apart.

Sausage and Pepper Marinara:

Rough chop bell peppers & onions.

Cut up sausage into larger chunks. I cut each one into 4 pieces them split them. 8 pieces per link.

Heat olive oil in large skillet over medium high heat. Add peppers & onions, salt and pepper.

Cook, stirring frequently, about 5 minutes.

Add Italian sausage, garlic powder and crushed red pepper. Continue cooking, stirring frequently, until sausage browns a bit and peppers are just tender crisp. About 15 minutes.

Reduce heat to low. Add marinara sauce, basil, and oregano. Stir occasionally and simmer about 15-20 minutes.

Herbed Linguine:

Bring a pot of salted water to a roiling boil. Add one tsp olive oil (this helps prevent noodles from sticking to pot and adds a bit of flavor).

Add pasta and cook to desired doneness (about 15 minutes for al dente).

When pasta is cooked how you like it, drain, and place in large bowl. Add 2nd tbsp of olive oil, parsley, and basil. Toss to coat.

Serve:

Place sausage and peppers marinara over pasta. Top with a good parmesan or similar cheese.
