Ingredients

400 gJohn Dory Fillet
Bean sprouts
Cabbage, sliced
Baby pak choy, sliced
2 Rice papers, cut into 1 inch wide strips
Celery leaves
Fried garlic
For the Soup;
1.5 l Water
3 coriander root
2 shiitake mushrooms, sliced
1/2 tbsp black peppercorns
2 tbsps soy sauce
1/2 tsp salt
1 white radish, cut into half circle
2 tbsps spring onion. Cut

Prepare the vegetables, blanch and set aside.

Boil the water with all of the ingredients. Cook on medium heat, until boiled and aromatic. Add John Dory, allow them to boiled once. Turn to low heat.

Prepare to serve, put the vegetables in the serving bowl. Add rice paper, scoop the John Dory soup into a bowl. Sprinkle with celery and fired garlic. Let’s enjoy don’t forget lime wedge and chilies powder for taste.
