Ingredients

  1. 10 slicesbread (I used honey wheat)
  2. 3eggs
  3. 1/2 cuphalf and half
  4. 2 TBSwhite sugar
  5. 1 tspvanilla
  6. Butter for pan frying
  7. 1 cupchopped strawberries
  8. 1/4 cupprepared whipped cream
  9. 1/2 tspcinnamon
  10. For cheesecake filling
  11. 1 cupwhipped cream cheese
  12. 2 tbspowdered sugar plus extra for garnish
  13. 1 tspvanilla extract
  14. For blueberry topping
  15. 1 cupblueberries (fresh or frozen)
  16. 2 tbswhite sugar
  17. 1 tspvanilla
  18. 1/2 cupwater
  19. 2 tspcornstarch mixed with 2 tsp of water

Cooking Instructions

    Whisk eggs, Half-and-half and sugar together. Add vanilla and cinnamon.

    Add 2 tablespoons of butter to a pan over medium heat.

    Dip bread in custard mixture removing excess. Once butter is melted, place French toast in pan. Cook 3 to 4 minutes and flip to the other side. Bread should be golden brown on both sides.

    Should prepare cheesecake filling whisk all ingredients together. Set aside.

    To prepare blueberry sauce add blueberries, water, sugar and vanilla in a sauce pan. Bring the mixture to a boil and add cornstarch slurry. Reduce heat to low.

    Continue to cook French toast. Add additional butter to pan as needed.

    To assemble take one piece of French toast and add 1 heaping tablespoon of cheesecake filling. Add a few fresh strawberries. Place another piece of French toast on top and cut in half. Continue this process until all have been assembled.

    Top with fresh strawberries. Blueberry sauce and whip cream. Garnish with powdered sugar and enjoy
