Quick and fast breadcrumbs done two ways using up basic everyday snacks. I often have mini bread sticks as a snack for our little girl, but they don't stay fresh long once the packet has been opened. So instead of throwing them away use them to make breadcrumbs

Quick and fast breadcrumbs done two ways using up basic everyday snacks. I often have mini bread sticks as a snack for our little girl, but they don't stay fresh long once the packet has been opened. So instead of throwing them away use them to make breadcrumbs

Prep first breadcrumb. Crush a handful of mini bread sticks I use the back of a spoon or you could use a blender if making a larger batch for freezing. Set aside

Prep second easy breadcrumbs. Use two handfuls of tortilla crisps. Crush by hand and set aside for coating.

Whisk your eggs and season well with salt and pepper. Dip your chicken drumsticks into the egg mixture and thoroughly coat.

Remove chicken from egg and coat in your two breadcrumb mixtures. I did two of each.

Place into an oiled baking pan. Bake in a preheated oven at 180c for 35 minutes.

Mix together the mayo and sriracha sauce.

Serve with the dipping sauce.
