  • 2 cupsgrinded corn
  • 1 tablespoonfull dry pepper
  • 2 pinchsalt
  • 2small very over ripe plantain
  • 1/4 cupsugar
  • Palm oil for deep frying

  1. 1

    Peel the over ripe plantain

    Put it in a blender and add pepper and sugar

    Add a tiny bit of water (best if you can do without water)

  4. 4

    Blend until very smooth

  5. 5

    Pour this in a bowl and add the salt

    Mix and pour in the grinded corn and use your hand to combine and mould well into a ball

    This is the consistency you should aim for (not overly too strong or too soft either)

    Now start cutting and moulding into tiny long mass with your palm (it should not be too thick else it won’t be too crunchy)

    Finish moulding all the batches and place on a tray

    Heat up palm oil in a deep pot but on low heat (else it burns fast without cooking properly)

    Make sure to deep fry, and on very low heat

    After like 10-15minutes, you start to see it getting golden brown and crunchy

    Remove with a sieve spoon and set on a line sieve to cool

    Ikara is usually eaten alone or paired with coconut flesh

Thanks for this recipe . I have a practical exam next week and my exam question says to prepare a three course menu for a warri royal palace . I actually picked this ikira for the dessert and have been looking for a proper practicalised recipe . This will sure help
