Ingredients

  • as requiredCoriander/parsley
  • 1/2 cuponion
  • 1/2 cuptomato
  • 1/2 cupcapsicum
  • 1/2 cupsweet corn
  • 1/2 cupwhite cucumber
  • as per requirementCheese
  • 1 teaspoongaram/chat masala
  • 1/2 teaspoonchilli
  • 1/2 teaspoonturmeric
  • 1/2 teaspoonkasoori methi
  • as requiredSalt to taste
  • Garlic butter/Oil
  • 1 Tablespoonoil
  • 2 teaspoonamul butter
  • 4-5big garlic cloves

    For the Garlic Butter/Oil:
    1. Put a wok on a low flame and pour one tablespoon of oil in it.
    2. As soon as you see the oil heat up, put around 2 teaspoons of butter in it.
    3. As the butter gets dissolved, out the garlic cloves, I grated the cloves, you can grate or add garlic as a paste as well.
    Stir and let it cook for around 30 -40 seconds and your mixture is ready.

    The above garlic butter/oil mixture needs to made quickly, ensuring heat is low for the entire time as it could very easily get burnt and would spoil the flavour. Also, if you keep the garlic for a longer time in the oil it would get overcooked and would not give you a subtle taste. The quantity of oil/butter depends on the quantity of garlic bread you want to make. Too much garlic will also dominate other flavours so be careful of it.

    For the garlic bread
    Put a wok or pan on a low to medium heat and pour 1 teaspoon oil in it.

    Add the vegetables one by one to the oil, I put the vegetables straight away one after the other.

  5. 5

    Add coriander, turmeric, red chilli powder, (or green chilli whatever favours you)salt, garam masala or chat masala. I put only 2 pinches of garam masala.

    Let it cook for maximum 2 minutes, turn off the gas and transfer the mixture to a bowl so that it doesn't cook further. You may sprinkle a few drops of normal temperature water on it to cool it faster.

    Take the bread /pav pieces. If you have bread then remove the edges, if you have pav then slice of the round part to make it even and prevent the topping from sliding down the pav. Brush bread/pav with the garlic butter/oil mixture.

    Spread the toppings on your bread/pav. Grate some cheese if you like it. Sprinkle garam/chaat masala or chilli and oregano flakes on the cheese. If you like the taste of garlic, you may drizzle a few drops of garlic butter/oil mixture on the cheese or before grating the cheese.

    Heat a non-stick pan and add 1 tablespoon of oil and spread it on the pan. Let it heat for around 30 seconds and then place garlic bread on the pan quickly. Cover with a lid and cook for 3-4 minutes.

    Turn off the stove and put the garlic bread pieces on a serving plate. Let it cool down for a while. Serve with green chutney and tomato ketchup or any condiment of your choice.
