Dry Potato Curry

Prepare all ingredients.
* If you don't have Baba's meat curry powder, add powdered ingredients listed at the back of Baba's ingredients list shown below. Add extra teaspoon of turmeric powder, 1/2 or 1 tbsp red chilli powder and extra garam masala.

A. - Peel and cube potatoes into medium bite-size. Boil until just cooked or just tender. Discard the water and keep aside.

B. - Heat 1/4 cup of oil in a wok. Add sliced onions, curry leaves, black mustard seeds and crushed lemongrass. Stir for a minute or two. Add BABA's Meat Curry powder. Keep stirring over medium-low heat until aromatic.

C. - Stir in potatoes. Add sugar and seasoning (s) of your choice. We use vegetable broth powder. You can also use chicken seasoning powder, chicken bouillon or mushroom seasoning powder. Keep stirring to mix. Taste and adjust seasonings accordingly before removing from the heat. Serve hot with steamed white rice.
