Ingredients

30 minutes
3-4 servings
  1. 4 cupscooked rice
  2. 3 cupschopped veggies (carrot, beetroot, peas, capsicum, beans)
  3. 6cashews fried (halved)
  4. 1/2 cupchopped onion
  5. 2 Tspgrated ginger garlic
  6. 1/3kashmiri red chilli powder
  7. For whole garam masala:
  8. 1Brown cardamom
  9. 3green cardamom
  10. 3cloves
  11. 5-6black peppers
  12. 1star anise
  13. 1thread mace
  14. 1 Tspcumin seeds
  15. 1 Tbspghee
  16. 1 Tspcumin seeds
  17. 2 Tspcooking oil
  18. leavesMint
  19. Curd raita
  20. Salt as required

Steps

30 minutes
  1. 1

    Heat oil and fry the chopped veggies. Set aside.

    Take ghee in kadhi and fry cashews. Keep aside.

    On low flame add cumin and all whole garam masala and then add chopped onions, cook till golden. Add grated, ginger and garlic and saute till rawness is gone.

    Add red chilli powder, cooked veggies and rice. Mix well. Garnish with friends cashews, mint leaves and serve with curd raita.
