Ingredients

  1. 500 gchicken thigh
  2. 160 mLlight soy sauce
  3. 20 mLdark soy sauce
  4. 50 mLChinese wine
  5. 80 grock sugar
  6. 4Shallots
  7. 4Spring onion; segmented
  8. 4 slicesGinger

Steps

30 minutes
  1. 1

    Fry shallots and ginger

  2. 2

    Add chicken thighs, spring onion, 200mL light soy sauce, 20mL dark soy sauce, 50mL Chinese wine and 120g rock sugar

  3. 3

    Add water until it almost cover the chicken thighs

  4. 4

    Boil the ingredients and continue to cook with low heat for at least 20 mins

  5. 5

    Allow the cooked chicken to immerse in the sauce for at least 1 hour for better flavour
