Sweet & Sour Celery

This is basically pickled Celery. I used my family’s Sushi Vinegar as marinade. This sweet and sour flavour is something I crave when I am physically tired. I often add a small Dried Japanese Chilli called ‘Takanotsume’ (Hawk Claw) to the marinade. Today I sliced it, believing it would give the marinade more heat, but it actually made it too HOT!!! I frantically picked up most of the Chilli slices. Better check the spiciness of the Chilli that you use.

Ingredients

4 Servings
  • 2-3Celery Stalks *200 to 250g
  • 3 tablespoonsRice Vinegar
  • 2 tablespoonsSugar
  • 1/2 teaspoonSalt
  • Chilli as required

Steps

    In a mixing bowl, combine Vinegar, Sugar and Salt. Add Chilli if you like it.

  2. 2

    Cut Celery Stalks diagonally into 4-5mm thick slices, add to the marinade, and combine well. Transfer to a container OR a ziplock bag, and leave it in the fridge overnight OR for several hours.
