Crock pot chicken, baby potatoes & green beans

The chicken turned out to be so juicy and tender. I think I might cook the chicken again with other spices to use for tacos. It shredded incredibly good.

Ingredients

  1. 2-3 lbsboneless skinless chicken pieces (I use the tender size/precut from Costco)
  2. 2 tspgarlic powder
  3. 2 tsppaprika
  4. 2 tsppepper
  5. 4 tablespoonsminced garlic (I used the jar kind)
  6. 4 tablespoonsolive oil
  7. 10-12baby potatoes
  8. 12 ozBag organic green beans
  9. 1/4 cupor less chicken broth or water

Cooking Instructions

    Mix the paprika, garlic powder and pepper together. Put half in a bowl, the other half in another bowl and set them aside.

    Place 2 tablespoons of oil in a skillet pan and then add the chicken. Sprinkle one of the bowls of the powder mix over the top of the chicken in the skillet.

    Sear the chicken very little, both sides, for maybe a minute.

    Cut the potatoes into quarters.

    When done, mix in a bowl, 2 tbsp of minced garlic, 1 tbsp of olive oil and the other bowl of the powder mix. Then toss the potatoes with the mix, coat the potatoes. Set aside.

    Next, spray the crock pot with olive oil or butter spray, then place the potatoes in the bottom.

    Then, place the chicken on top of the potatoes.

    Now, in a bowl, mix 1 tbsp olive oil and 1-2 tbsp of minced garlic.

    Throw in the green beans and coat them with the mixture.

    Place those on the very top of the crock pot, on top of the chicken.

    Lastly, I put 1/4 cup of chicken broth, but you can put a little water or whatever. I wanted to make sure it didn’t burn. You don’t even have to use 1/4 cup, it could be less, just to ensure it’s got some moisture.

    Cook on low for 4-5 hours.
