Garlic Scallop Pasta

Ingredients

30 minutes
2 people
  1. 12 ouncesfresh scollops
  2. 4 slicesthick cut bacon
  3. 8 ounceslinguine pasta
  4. 1 tablespoonbutter
  5. 1 tablespoonolive oil
  6. 4 clovesminced garlic
  7. 1 cuppasta water reserved from cooked pasta
  8. 1/2 cupheavy cream
  9. 1/2 cupparmesan
  10. 1/4 cupfresh chopped parsley
  11. 1/2 teaspoonsalt
  12. 1/4 teaspoonground pepper

Cooking Instructions

    Cook pasta according to directions. Reserve one cup of pasta water.

    While pasta is cooking start to cook bacon. You can cut it into bite sized pieces before cooking or after. Don't cook to very crispy. Remove bacon from pan and grease.

    In same pan add butter and oil and add seasoned scallops. (pat scallops dry and season with salt and pepper.)

    Cook scallops over medium high heat until browned. Flip and repeat on next side.

    Now sprinkle smoked paprika and cayenne.

    Remove scallops and add garlic to pan. Cook garlic until fragrant but no browning. About 30 seconds to one minute. Add cream and cheese. Stir until cheese melts.

    Stir in parsley. Add 1/2 the pasta water. Now add in cooked pasta and toss until pasta has been coated by sauce. If too thick add last bit of water.

    Add in scallops and bacon
    Mix and serve.
