Gajar matar sabzi is very popular in North Indian house holds during winters. This sabzi is prepared in ghee with very less and basic spices. Ingredients

25 minutes
3 persons
  • 1 Cupgreen peas
  • 3carrots
  • 1/4 cupfinely chopped coriander
  • 3 tbspghee
  • 1 tspcumin seeds
  • 1/4 tspturmeric powder
  • 1 tspred chilli powder
  • 1 tspcoriander cumin powder
  • 1 tspsugar (optional)
  • as requiredSalt to taste
  • Grind into paste:
  • 1tomato
  • 1small onion (optional)
  • 2green chillies
  • 1big piece ginger

Steps

  1. 1

    Peel and chop carrots in small roundels. Grind all ingredients of paste and prepare the paste.

    Heat two tbsp ghee in a pan, add cumin seeds and let them splutter. Furrher add paste and sauté properly. Lastly add salt and dry spices and sauté.

    Now add green peas and carrot. Mix well with paste and sauté for a while. Then add 1/4 cup of water, cover and cook for 5 - 7 minutes.

    When it cooks, add sugar and coriander and cook for a couple of seconds. Lastly add spared one tbsp ghee, mix and cook for a couple of seconds and turn off the heat.

    Serve hot this aromatic and delish sabzi with roti-paratha.
