Slice the butternut squash into 1/2-inch (about 1.5 cm) thick rounds.

Preheat the oven to 400°F (200°C).

Place the butternut squash slices on a baking sheet. Drizzle with a little olive oil, season with salt and pepper, and bake for 20 minutes.

Remove from the oven and top each slice with a round of goat cheese, a sprig of rosemary, and a drizzle of honey.

Return to the oven and bake for another 10 minutes at 400°F (200°C).
