Cooking Instructions

PROCEDURE FOR DEVILED EGGS
1.Cut the hard boiled eggs in half lengthwise. Carefully remove the yolks and place them in a medium bowl.
2.Smash the egg yolks, mayonnaise and Dijon mustard with the back of a fork until fairly smooth.
3.Add black pepper powder, sour cream, cream cheese,salt as needed and chopped spring onions. Mix well till the egg yolk mixture is creamy.

PROCEDURE FOR CRISPY PRAWNS
1.Marinate the prawns with all the ingredients mentioned for 20 minutes.
2.Once the oil is hot fry the marinated prawns one by one till brown and crispy.
3. Strain on a kitchen towel.

PROCEDURE FOR ASSEMBLING
1.Filling can be made up to 1 day in advance. Cover and refrigerate filling, egg white halves and garnish shrimp until ready to serve.
2.Just before serving, use small spoon or piping bag to divide filling between egg white halves. Garnish each egg with a whole fried crispy. Sprinkle with chopped spring onions. - 4
Warm the garlic herbed butter in a small pan, once the butter melts, switch off the flame. Add ½ tsp paprika powder and mix with a spoon.

Now just drizzle the butter on top of each eggs and serve immediately. I prefer serving with the egg mayo filling as dip.
