Ingredients

  1. 1 cupplain flour
  2. 2-3 tbspghee
  3. 6 tbspwater 💦
  4. 3/4 tspcarom seeds
  5. Salt to taste 🧂
  6. For filling:
  7. 4-5boiled potatoes🥔
  8. 4finely chopped carrots 🥕
  9. 2 tbspghee
  10. 1 tbspfinely chopped ginger
  11. 2-3chopped green chillies
  12. 1 pinchasafetida
  13. 2 tbspfinely chopped dill/ 3 tbsp coriander leaves 🌿
  14. 1/2 tspdry mango powder 🥭
  15. 1/4 tspChaat masala
  16. Salt to taste 🧂
  17. 1 tspgaram masala powder
  18. 3/4 tspred chillies flakes 🌶️
  19. 1/2 tspfennel powder
  20. 1 tspcoriander cumin powder
  21. 1/2black pepper powder
  22. Samosa sheets or made with homemade dough the cones

Steps

    In a bowl 🥣, add plain flour, carom seeds, salt 🧂, ghee and rub the flour well for 3 mins with your palms, add water 💦 little by little and mix the flour to form a stiff dough, note: it should be a stiff and not soft dough, cover and rest for 30 mins, keep aside or use samosa sheets.

    Heat ghee, add cumin seeds, when start to crackle, add a pinch of asafetida, chopped carrots 🥕 saute for 1 min, add salt 🧂, 1 tsp paprika powder 🌶️, coriander cumin powder, garam masala powder, black pepper powder and mix well. When carrots are tender remove from heat.

    In a bowl 🥣, add crumble them do not mash them up, add finely chopped green chillies, finely chopped dill/ coriander leaves 🌿, dry mango powder 🥭, Chaat masala, red chilli flakes, fennel powder and sauted carrots 🥕 and mix well with potato mixture 🥔, check salt 🧂. Filling is ready

    Make a cone with samosa sheets or with home 🏡 made dough and fill in the masala, seal the edges well and keep aside, complete all the sheets or dough with the masala, heat oil in a wok, fry the samosas till golden brown and serve hot, garnish with tomato chutney.
