Spanish Tortilla or Omelette

Add oil to your pan and cook it over medium heat. Add the onions and cook for 6 minutes until translucent

While the onions are cooking, Peel and rinse the potatoes under running water and pat them completely dry.

Cut potatoes into 4 equal quarters. Cut each quarter into half and dice into 0.5cm pieces

Add the potatoes to the pan and stir until all the potatoes are coated with oil. Keep mixing every 2 minutes until the potatoes are cooked through

Break 6 eggs into a bowl and whisk to mix

Remove the pan from the heat after checking to see if the potatoes are cooked through (after 22 minutes). Add the potatoes to the eggs, season generously with salt and mix. Allow the mixture to rest at room temperature for 5 minutes so that flavours blend in

Using low medium heat, cook the tortilla in the same pan you had used earlier. Pour the mixture into the pan and level it so that it's even, flat layer

After 4 minutes, run your spatula on the side of your tortilla to ensure that it's not sticking to the pan. After a minute, it's time to flip the tortilla

Gently flip the tortilla by sliding it onto a plate and flip onto the pan (or use an equal size pan to flip it onto the other pan. Use the back of the spatula to compact the tortilla and cook for another 5 minutes

Serve warm, room temperature or cold
