White Day Pink Diamond Cookies

I used to make this [Ice box cookie] type cookies when I was a child. We'd use every bit of dough and use lots of butter. Even as a child I could always make it quite deliciously.

At Step 4, mix until it becomes like the flour and butter have blended well and made a marble-like texture. Using powdered sugar instead of granulated sugar will make the cookie more crispy and slightly sweeter. Make sure not to add too much red food coloring. For 5 cm [2.0 in] in diameter 18 pieces. Recipe by Asamato

Ingredients

18 servings
  1. 150 gramsWhite flour
  2. 100 gramsButter
  3. 40 gramsSugar
  4. 1Egg yolk
  5. 1Granulated sugar
  6. 1 dashRed food coloring

Steps

    Whisk the butter into the cream. Then add sugar and mix. Next, add the egg yolk and mix.

    Sift white flour in and mix.

    When the dough looks crumbly like the picture, add the red food coloring by dissolving in 1/4 teaspoon of water and mixing quickly.

    Take the dough out and place on plastic wrap and form it into a clump. If you knead too much, it will become a dough which is just pink, so be careful.

    Try not to create air pockets and shape it into a rod. Wrap with plastic wrap and let is sit in the refrigerator as long as possible. At least more than two hours.

    At Step 5, if you use a bamboo sushi mat to shape it, it will be a beautiful cylindrical shape.

    Once it hardens, lightly wet the outside and sprinkle lots of granulated sugar so that it sticks.

    Slice the dough into about 1cm thickness. After slicing the dough, further press the granulated sugar into the outside edges of the cookies.

    Bake for 15 minutes in a 180°C preheated oven.

    Cool it on a cake cooler so as not to let water form at the bottom.

    It looks cute even with a simple wrapping. Using pink food coloring or a natural colorant will also give it a lovely color.
