I have a love for Italian cuisine, as you may have noticed. I am always searching for new flavors, even though Italian cooking is quite similar to our own. I made amaretti a few years ago, but they were crunchy, which I wanted to use in another recipe. These are the soft ones.

Preheat the oven to 340°F.

Beat the egg whites with the salt until stiff peaks form. In a bowl, mix the almond flour with the sugar. Add the flavorings to the meringue and fold gently. Then add the almond/sugar mixture and stir until a dough forms.

Take a teaspoon of dough and shape it into balls, placing them on a baking sheet lined with parchment paper, and gently press them down with your hand. Bake for 20 minutes. Dust with powdered sugar once they cool.
