Ingredients

30-45 mins
10 not-enchiladas
  • 1 cancorn (drained and rinsed)
  • 1 canblack beans (drained and rinsed)
  • 16 ozshredded rotisserie chicken
  • 8 ozblock cream cheese
  • 1/4 cupsour cream
  • 4 ozcan of green chilies
  • 1 canchicken and cheese enchilada flavored soup by Progresso
  • 1 cancream of chicken with herbs by Campbell's
  • 1 canred enchilada sauce
  • 10medium soft taco size flour tortillas
  • Taco seasoning (preferred amount, maybe 4 tbsp)
  • 1-1 1/2 cupshredded cheese (any kind, I prefer colby jack)

Steps

30-45 mins
  1. 1

    Preheat oven to 350f

  2. 2

    Rinse and drain corn and black beans

  3. 3

    Combine chicken, corn, beans, chilies, cream cheese, sour cream, and taco seasoning until mixed

  4. 4

    Spoon mixture into tortillas (roughly 1/3rd cup to 1/2 cup) and roll into burritos and repeat for all 10 burritos

  5. 5

    Place all burritos into baking pans that's taller than burritos

  6. 6

    Combine cream of chicken, enchilada sauce, and chicken and cheese enchilada flavored soup

  7. 7

    Drizzle mixture over burritos making sure to coat all over

  8. 8

    Put in oven and bake for 20-25 minutes at 350f

  9. 9

    Pull out of oven and add shredded cheese over top of burritos

  10. 10

    Bake for another 5 minutes or until cheese melts

  11. 11

    Enjoy with fork
