Cooking Instructions

We started from the soup, prepared a big pot can put the bones and have extra 3 times of the bones room.
Put the bones and 3 times of the bones’ volume water for 4 hours and refresh the water at least twice during the process. - 2
4hours later… Refreshing the water again and put the Ramen soup part’s ginger into the pot and boil it with medium heat. During the process,we need to remove the foam.

After that, take all the bones out, wash and clean all the bones to remove the dirty thing.

Put all the bones back to the pot and add 3 times more volume of water in it. Use medium high heat to boil the soup for 4 hours, half covered the pot and stir the soup every 30 minutes.
During the process, fill the water to the first time we do every 2hours and we need to remove the foam by the time we finish filling the water.

During boiling time, we can start makeing the Japanese chashu (meat).
First we need to use high heat to cook every side of the pork until it is golden brown and take it out (if you want to make the pork shape look better, you can tie it up) - 8
Then we can start making the sauce for pork, put all the Japanese chashu part ingredients except the pork, use medium low heat until boiled then add the pork,turned into low heat covered and cook for 2hours
2 hours later just turn off the stove and keep the pot covered, let the pork flavorful more. - 9
Then we move to the second part of making ramen soup, we don’t have to cover the pot at this part.
Stirring the soup every so often, picking up the bones and hitting it every 30 minutes and filling the pot with water every 2 hours until another 4 hours passed.

By the time we were making the soup, we can start making the ramen noodles.
Mixed all the ramen noodles part ingredients together and let it take a rest for 1 hour.
1 hour later, roll up the dough to rectangle and fold the dough into thirds routine for 6-8 times. After that, we can start rolling the dough into a big rectangle and cut them into slices. Don’t forget to put enough flour keep them separate. - 13
We finally can move to the last part of making ramen soup.
We fill the pot with water last time, add the ramen soup part rest of ingredients into the pot and use the highest heat to boil the soup until the thickness of the soup you want. (I used 12 hours)

To boil the noodles, you just need to boil the water first and add the noodles until they float on top.
Then put all the part of ramen into your bowl and you can finally enjoy it 👏👏👏Next time we should just go to the ramen restaurant and eat lol
