Steps
- 1
Dilute custard powder in 1/2 cup milk and keep aside. Keep strong brewed coffee ready.
- 2
Add sugar in heavy bottom broad pan and turn on the flame on medium. Let the sugar melt. Stir occasionally if needed. As the sugar starts to melt, turn the flame low and keep an eye on it.
- 3
Once sugar melts completely and turns golden carefully add two tbsp of water and whisk well to deglaze the caramel. Be careful as the caramel is very hot and may spatter.
- 4
Add remaining milk to caramel. Keeping the flame low, let the caramel dissolve. Do not boil. It takes approximately 8-10 minutes.
- 5
Now add custard slurry to it and mix well. Add instant coffee powder, mix and stir well for couple of minutes.
- 6
Add strong brewed coffee and keep stirring till the custard thickens. Keep the flame low to medium. Once it starts to thicken and reach to desired consistency turn off the heat.
- 7
Transfer it in an another bowl and cover it with cling wrap to prevent a skin forming on top. Refrigerate for 2-4 hours to set it firm.
- 8
Serve chilled with your choice of toppings like chocolate shavings, nuts, fruits, whipping cream etc.
Note:
1. If you like plain, then replace custard powder with cornflour.
